Blackberry Delight

Every year I have the privilege to go to my parents 25 acre home. They live in beautiful Oregon where blackberries grow like wild fire. My mother and I pick berries for a week straight. You could only imagine how our hands look after a week of picking wild berries. We get pricked, grabbed, intangled in the berry bushes, fall of ladders, oh and not to mention scratches all over our arms. By the time I get ready to go home, I look like I  was attacked by a Ferrell cat! Oh, let me tell you it’s definitely an adventure! One I look forward to every year. I get the best of both worlds… I go home with a years worth of berries, but, most importantly I get precious, priceless time with my family!
Ingredients
Frozen berries (any kind you desire)
1/2 cup flour
1/4 cup butter
1/3 cup sugar
2 tablespoons brown sugar
yields 5-6
Directions
Place berries in ramekins. Leave ample space for crumb topping.. The more the better.

To make crumb topping. place flour, butter, and sugars in a small bowl and smash and stir with a fork.
Place crumb topping on top of berries and bake at 350 degrees for 35 minutes. Serve with a dollop of fresh whip cream or my favorite, a dollop of vanilla ice cream.

You know, I have these wonderful memories of blueberry picking in Wisconsin when I was a kid! We always ate way more than we brought home!

    Great post! Thanks for sharing!
